We make an expanding range of alcoholic and non-alcoholic drinks.

Fermented soft drinks
Our plan is to focus on the fruits & herbs that grow regionally to the land we are producing in. This is currently Britain, so our drinks involves the ingredients that grow most abundantly here – Elder, Apple, Rosehip, Blackberry, Meadowsweet, Gooseberry, Redcurrant, Blackcurrant, Rowan, Medlar and Rosemary, to name but a few. Our beers involve English hops and grains and with our emphasis on funding food forests, we aim to be able to forage all of the ingredients for these delicious drinks, from landscapes all around us in the future.
Presently, our ingredient sourcing is always an adventure, as the forest gardens we are planting haven't matured yet (and the south downs is still covered with sheep devouring potential food forests) – we mainly forage and intercept the fruits and herbs that we use to make all our drinks.
For example, we organise apple scrumping trips to abandoned orchards to glean the apples that we end up using for our Apple Ebulis and Organic Ciders.
As the cost of organic or Soil Association produce is so often prohibitively expensive, our order of ethics in sourcing goes like this:
1. Locally foraged - from hedgerows and forest gardens
2. Intercepted or surplus fruit from grocers and markets
3. Locally grown by farmers or gardeners that share our values
Since making the drinks for the restaurant Silo in 2014, we realised that a real gap in the market is in health drinks, which we now produce as much as our alcoholic drinks. We are Brighton based producers of Kombucha, Water Kefir and Nettle Ice Tea, all of which are refreshing, delicious and incredibly healthy drinks.
We are expanding our range to include unrefined sugar-free drinks and are soon to be launching our new energy drink in Brighton's ethical supermarket - Hisbe.
Permablitz landscaping service
Permablitz is a word or an event involving a community convergence on dis-used or degraded land to regenerate to states of biodiversity and productivity. Permaculture is put to work with many hands to make light work and whole landscapes are transformed in the space of two days. We are part of a network that can organise earth repair Permablitz events in Sussex, Somerset or surrounding counties.
The only costs are of labour and compost to be delivered all of which we organise and invoice for and plants if desired, which we stock and source. Because we utilise local materials with emphasis on re-use, reclamation and repurposing, adding character and to the landscapes we regenerate, material costs are always low or zero.
The image here shows a landscape that was strewn with rubbish above an stunning valley view with a lake (which used to be a coal mine) – a permablitz over a week, cleared every single piece of plastic from the soil and used appropriate discarded materials from the landscape to make a beautiful social landscape that was then planted with fruit trees and useful perennial plants to make a forest garden.
We can offer the following as part of Permablitz landscaping services in your area and each service is designed in the landcape though observation and intervention.
Wildlife ponds, raised beds, forest garden planting, social landscaping, earth building, green-roof sheds and animal houses, bespoke reclaimed poly-tunnel construction, water retention landscaping and keyhole garden installations.
If you want to brew with us and you have a suitable space, we can supply you with the appropriate kit to brew from your kitchen. With tuition, you could brew for the Old Tree Brewery - we find outlets for the sought after drinks we create near you and pay you for your time in producing them and supplying them locally. We can also supply intercepted fruit through our ties with the Real Junk Food Project Brighton and veg to those with juicing equipment - to those that wish to generate income by supplying raw fruit juice to restaurants
The process of training and integrating people to co-produce with Old Tree contributes to an emerging networked mode of production that is the means surpass our current economic endgame. It reduces resource consumption and builds community instead depleting and destroying both. The revenue generated by these goes towards Old Tree growth - investment in land regeneration, fruitful landscapes and gardens that garden people.
The Old Tree Inn
This is a festival space available to hire for events. Through our forestry work we have milled timbers from fallen trees and crafted beautiful benches and tables, made 100% from locally sourced woodlands.
We currently have a field pub infrastructure to hire out that can fill a large marquee and seat around 60 people, including a bar that can serve 6 people at a time with 6 barrels embedded at a convenient drink pouring height, within the wooden bar itself.
We enjoy working with wood in this way and find it makes the best use of timber from the local woodlands we manage.
Wood therapy can be achieved through Green woodworking, which like gardening, has been proven to benefit both mental and physical health. So creating bespoke furniture for special events or locations is something we wish to develop as makers.
