Ebulis - Elderflower Bubbly with excitement!
Elderflower, Apple, lemon and lime sparkling cyder. The Old Tree classic.
Ebulis comes from Sambucas Ebulis - the name of the European Elder tree, which comes from the latin 'Ebulire', which means 'to boil over' and is the root of the English word ebullient, which means bubbling over with excitement, which is exactly what this drink does, in the bottle and to the human mind!
All of our ingredients are foraged, locally harvested or intercepted where possible.

And with the veil of
Gruit Ale was everyones favourite beer until Hops came along. Its made from the wild herbs – Yarrow and Bog Myrtle with Barley. Its effects are euphoric, stimulating and aphrodesical, compared to beer with Hops which is actually anaphodeisical and a depressent. The reason Hops replaced it is because the Catholic Church used to have a monopoly over the production of Gruit and Catholics were always so high drinking it protestants deemed they were having too much fun and not being true christians! The protestants teemed up with merchants to make beer from hops and eventually, because Hops preserve ale so much longer, it became more economically viable longterm and Gruit fell out of production. Here it is again in 2014! GRUIT, the fun ale, is back in the game.
Nettle Iced Tea
We forage nettles from as soon as they come up in the spring til the late winter when they die back. To our ancestors they were such a valuable crop, as this quote recollects: "Nettles were once tithed, they have so many uses: medicine, food, fodder, fertiliser, beer, dye, fibre for thread, nets, durable cloth, paper, hair restorer, aphrodisiac and smoke!" They are perhaps the most versatile of all plants ubiquitous in Britain.
Our Nettle cordial is the best creation we are yet to make from them and we are experimenting with old recipe's for Nettle Beer.
Its part of our mission to reconnect people with the kingdom of plants and over-riding the bad reputation nettles have earned with their status of 'irritating weeds' over the past century or two is part of this.

Lime & Ginger
Since it's origin to it's present usage ginger remains the most cultivated herb on the planet. And understandably so, for it's flavour is wondrously fiery yet perfectly tempered with earth's soily sweetness. Combined with a citrus base this cordial comes alive as a simple healing tonic. Green and misty in colour it hits the tongue as a bittersweet symphony of flavour......
This drinks uses no other preservatives other than the naturally occurring citric acid contained within the limes. We also uses pasturisation to further increase it's shelf-life. Artificial preservatives are not welcome here.
