Welcome to OLD TREE 

We are an ecological brewery based in Brighton producing a unique range of small-batch, probiotic and celebration drinks.

Part of the FIELD makers project, next to the Brighton Woodstore we run a fullyโ€“licensed Brewhouse and Drinks garden on Lewes Road, producing Living Drinks for Living Soil.


We make drinks with the seasons, foraging ingredients and growing as much as we can. We are committed to open-sourcing our knowledge in fermentation and food-forestry for (social, ecological and economic) resilience. Inspired this book, we are working to revive the forgotten secrets of ancient fermentation for a cultural reconnection with healing plants.


Old Tree is a community gardening project. We run edible landscape tours followed by wild drinks tastings. We offer permaculture advice and can provide resourceful gardening services, with an enthusiasm for all plants that are edible, useful and easy to grow!


We organize harvest festivals, where we practice and share skills in fermentation, foraging, edible landscaping and micro-husbandry. Micro-husbandry is the emerging focus of Old Tree, which is 'harnessing the beneficial powers of microbes'! Micro means 'small-scale' and 'husbandry' comes from the Norse 'hus-bondi' meaning 'dweller of the house' or 'occupier of the soil'.


To rediscover the rich heritage we all share in both the art and science of fermentation. We see the widespread revival of fermentation culture as central to creating a healthier and less wasteful food and drink system. Many of the health problems we face, both as people and planet can be solved through a wider-spread understanding and harnessing of the beneficial properties of plants and micro-organisms.


Old Tree brewing is about creating local abundance by restoring life to soil and nurturing forest based food systems. Composting everything used in food-production and using it as fertilizer for edible landscapes we can achieve higher and more nutritional yields of everything we value. From mushroom cultivation to bio-char production - we create the conditions for micro-organisms to thrive which help plants thrive which improves the quality of our food and the health of our biosphere.

We are working on our first demonstration Drink Forest garden next to our Brewhouse Cafรฉ located at FIELD BTN. Opposite Brighton University's Mithras House โ€“ found here.

This is a new space to sit and enjoy craft drinks on this previously desert-like strip of Lewes Road. We are landscaping an edible Kefir Garden!! An edible landscape to celebrate our food and drink plant diversity.
